Rhubarb Crunch

This Rhubarb Crunch is the epitome of comfort food. It’s just like grandma used to make, but with wine!

Ingredients

  • 1 cup flour
  • 3/4 cup quick oatmeal
  • 1 cup brown sugar
  • 1/2 t salt
  • 1/2 cup butter; softened
  • 4 cups chopped rhubarb
  • 1 cup Ackerman Rhubarb Wine
  • 1 t vanilla
  • 1 cup sugar
  • 3 T cornstarch

Directions

  1. In saucepan; stir rhubarb, wine, vanilla, sugar, and cornstarch
  2. Cook on moderate heat, stirring constantly until mixture thickens
  3. Pour into greased 9×9 pan
  4. Combine flour, oatmeal, brown sugar, salt, and butter
  5. Stir and pour over rhubarb mixture
  6. Bake at 350 degrees for 1 hour
