Strawberry Wine Shortcake

As beautiful as it is delicious, this strawberry wine shortcake will make any occasion a special one.


  • 1 pkg white cake mix
  • 1-1/3 c Ackerman Strawberry Wine
  • 1/4 c unsweetened applesauce
  • 2 egg whites
  • 1 egg
  • 1 pkg sugar free strawberry gelatin
  • 2 c boiling water
  • 1 pkg (16oz) frozen sliced strawberries; thawed, drained
  • 1 carton (16oz) reduced fat whipped topping
  • 10 fresh strawberries, halved


  1. In a large mixing bowl, combine dry cake mix, wine, applesauce, egg whites, and egg; beat on low for 30 seconds. Beat on high for 2 minutes
  2. Pour into a 13 x 19 inch baking dish coated with cooking spray
  3. Bake at 350 for 30-35 minutes or until toothpick comes out clean
  4. In a large bowl, dissolve gelatin in boiling water
  5. Stir in strawberries
  6. Using a sharp knife, make a diamond pattern in the top of the hot cake; immediately pour gelatin mixture over cake
  7. Cool on wire rack
  8. Refrigerate at least 6 hours
  9. Spread with whipped topping
  10. Garnish with fresh strawberries
